Trehalose dihydrate precipitated from dilute ethanol is colorless or white orthorhombic biquinate crystal with sweet taste. As a food additive and sweetener, the sweetness is equivalent to 45% of sucrose. As it is not a reducing sugar, Maillard reaction browning will not occur when it is co heated with amino acids and proteins.
