Stevioside (CNS: 19.008; INS: 960), also known as Stevioside, is a glycoside extracted from the leaves of Stevia Rebaudia, a composite plant (called Stevia rebaudiana rebaudia in China). Its sweet component is composed of Stevioside and stevioside A, B, C, D and E. Stevioside can be extracted, clarified and crystallized from dry leaves with water. In actual production, three types of stevioside were obtained, namely crude extract and products with purity of 50% and 90%.
