Propyleneglycol alginate (PGA) is a kind of new-style excellent food additive. It's made of Alginic Acid by deeply processing which extracted from natural Brown Seaweed. PGA is white or light yellow powder, almost tasteless or a little fragrance, soluble in water and forms sticky and colloidal solution, insoluble in ethanol and other organic solvent.
Because of its hydrophilism and lipophilicity, PGA has emulsifying ability and can be as foam stabilizer, it can steady the ioly gel. Also PGA has acid fastness. Because PGA is non ionic compound, so it's stable to metal ions and don't solidify or separate out. PGA is widely used in food and pharmaceutical field.
1. In food industry,
As thickening agent, stabilizer and emulsifier, PGA is used in yogurt and ice cream, the surface of the product is smooth without concavo-convex, with full-bodied mouth feel.
As thickening and emulsifying agent, used in cheese and other milk products, the expansion and emulsifying effect is quite good with comfortable mouth feel.
As foam stabilizer used in beer, its foam is pure white, fine and smooth, and will keep longer time.
As the acid proof agent, emulsifying agent and dispersing agent used in all kinds of fruits juice beverage, the products will not precipitate or laminate, and the oil composition is stable.
As the modifying agent, PGA can be used in flour, noodles and convenience food etc. Moreover, it can also be used in tomato sauce, meat sauce, soy sauce, emulsion flavor, syrup and sugar-coating etc.
2. In medical industry,
PGA can be used as stabilizer for X optical contrast agents, protective agent for Gastrointestinal mucosa, and the monomer for cosmetic material.
(1)Good emulsifying, dispersing, stabilizing Properties;
In the food processing oil-water separation often occurs, in order to improve product quality and prolong shelf life. Emulsifier is usually added during the procession, it will stabilize the mixed phase, and form a uniform emulsion. So that to avoid and prevent oil-water separation, stratification, precipitation happen in food and beverage.
(2)Starch anti-aging effects;
DMG can form complexes with protein and starch, and can form insoluble complexes with amylose starch to prevent the recrystallization after cooling to prevent the aging of starch retrogradation, making bread, cake, potato products and other starch-rich foods remain fresh and soft for a long time
(3)To improve the fats crystallization;
Molecular distilled monoglycerides can orient in the surface of greese, control and stabilize greese crystallizing, especially in margarine, shortening and other oils and fats products, . It can also improve the plasticity and ductility to prevent the condensate layer and so on
