α-cyclodextrin is a kind of organic matter, appearance of white crystalline powder, also called cyclohexose, cyclic maltohexose. It is a general term for a series of cyclic oligosaccharides produced by amylose under the action of cyclodextrin glucosyltransferase produced by Bacillus.

The hypoglycemic effect of alpha-cyclodextrin helps to lower the glycemic index (GI) of foods, which not only benefits patients with diabetes: because such foods are digested more slowly, blood sugar can be maintained at a stable low level, but also through dietary adjustment, the incidence of cardiovascular disease, overweight and diabetes can be reduced.

α-cyclodextrin can also be used as a water-soluble dietary fiber in the food manufacturing industry, such as dairy products, baked goods, granola bars, breakfast cereals, etc. Because of its positive effect on blood lipid levels, it can also be used to control weight.

Alpha-cyclodextrin is a cyclic sugar molecule with very low viscosity and high stability, even at high temperatures and low PH. Regardless of the PH level, even when used in complex food systems, there is no Browning reaction or discoloration. The dissolved alpha-cyclodextrin is clear and odorless, so it can also be used in beverage production.
