The role of ammonium bicarbonate in the food leavening agent is to add it to the main raw material wheat flour for producing baked goods during the food processing process. The ammonium bicarbonate will be thermally decomposed during the processing to generate gas, which will cause the dough to rise. The dense porous structure is formed such that the article is bulky, soft or crispy. The alkaline leavening agent acts as a single (gas) and can produce certain alkaline substances.
