Ammonium bicarbonate is an inorganic compound with formula (NH4)HCO3. The compound has many names, reflecting its long history. Chemically speaking, it is the bicarbonate salt of the ammonium ion. It is a colourless solid that degrades readily to carbon dioxide, water and ammonia.
Food grade ammonium bicarbonate is an advanced fermentation agent for food. Combined with sodium bicarbonate, it can be used for raw bread, biscuits, pancakes and other leavening agent. It can also be used as foaming powder juice raw materials. The carbon dioxide production starts at temperatures above 80 °C. The mixture for cakes using this method can be allowed to stand before baking without any premature release of carbon dioxide.
