Polyphenols are a large class of naturally occurring organic compounds characterized by multiples of phenol units. They are abundant in plants and have diverse structures. Polyphenols include flavonoids, tannins, and ellagitannins, some of which have historically been used as dyes and to tan clothing. Some polyphenols are traditionally used as dyes. For example, in the Indian subcontinent, pomegranate peels, rich in tannins and other polyphenols, or their juices, are used for dyeing non-synthetic fabrics. Polyphenols, especially tannins, traditionally used for tanning leather, are also used today as precursors for green chemistry, especially for the production of plastics or resins by polymerization with or without the use of formaldehyde or particleboard binders . The purpose is usually to utilize the plant residue of grapes, olives (called pomace) or hickory shells left after processing. Pyrogallol and pyrocatechin are among the oldest photographic developers.
