Chemical property
Usually chitin mainly refers to chitosan, it is also called chitosan, deacetylated chitin, deacylated chitin, soluble chitin, soluble chitin. Amorphous solid, specific rotation [α]D11-3° ~ +10°. Almost insoluble in water, but soluble in organic acids such as formic acid, acetic acid, benzoic acid and naphthenic acid, as well as dilute inorganic acids. The industrial product is white or off-white translucent flake solid, slightly pearly luster. Tasteless, non-toxic and easy to degrade, it is a rare natural cationic polyelectrolyte. A polysaccharide obtained by hydrolysis of a strong base or enzymolysis to remove the acetyl group from the chitin glycogroup. Can dissolve in low acidity aqueous solution, has good biocompatibility, no antigenicity, insoluble in human liquid. The chitin in the shell of lower animals and plants widely existing in nature, such as arthropods (shrimp, crabs), is used as raw material, which is obtained by alkali and heating for deacetylation.
Product use
Thickening agent, stabilizer, gelling agent, binder. It is also used to prevent mildew from acidic substances, and can form a transparent semi-permeable film on the surface. Used for curing products, baking products, bread, oily food, etc.In the food industry, it is a natural, non-toxic fresh-keeping agent and flocculant, and can adsorb cadmium, mercury, copper and other heavy metal ions in water.
Carboxymethyl chitosan, a water-soluble chitosan derivative, is an amphotic polyelectrolyte, which is formed by introducing the hydrophilic group -CH2COOH into the chitosan polymer chain. After carboxymethylation modification, chitosan improves its water solubility, especially its solubility in neutral and alkaline solutions is significantly enhanced, so that it has the properties of film formation, thickening, moisturizing and chelating. Therefore, it is widely used in agriculture, medicine, health products, cosmetics, preservation, environmental protection and other aspects.
As a medical dressing, chitosan hydrochloride has the following functions: antibacterial, promoting wound healing, hemostatic, absorbing wound exudates, etc. At the same time, chitosan can be degraded into natural metabolites by lysozyme, which is non-toxic and can be completely absorbed by organisms. However, because chitosan is insoluble in water, it can only have contact antibacterial effect, and can not act well on the wound interior, which greatly limits its application in the medical field.
