White or off-white powder, odorless, tasteless, more soluble in cold water, gelatinization started at about 75 °C. The viscosity of the starch paste of the acid-modified starch of the same concentration is lower than that of the similar original starch. The gelatinized solution having a concentration exceeding 10 g/100 mL is cooled to form a gel state.
Can be used for seasonings, soups, candies, ice cream, popsicles, ice cream, and can be used in the production and processing of fruit dan, soft candy, beverage granules.
