Activity definition: 1 gram of 1 ml enzyme solution liquefying soluble starch for 1 hour at 60 ºC and pH 6.0 is an enzyme activity unit, expressed in U / ml

Moisture content: ≤ 8%

 

Thermal stability: it is stable below 60 ºC, and the most suitable temperature is 60-70 ºC, which can be applied to the liquefaction process up to 90 ºC

 

PH stability: stable at pH 6.0-7.0, optimal pH 6.0, serious deactivation below pH 5.0

The effect of calcium ion concentration on enzyme activity: calcium ion can improve the stability of enzyme activity. Without calcium ion, enzyme activity is completely lost

Properties: yellowish brown or almost white powder. It is extracted from Bacillus subtilis and dissolved in water. Under the medium temperature condition, the enzyme can hydrolyze the refined α - 1,4 glucoside bond of starch molecule rapidly, cut off the short bond dextrins and a small amount of low molecular sugars randomly from the inside of starch molecule. Both amylose and amylopectin are decomposed in an irregular form, so that the viscosity of starch pulp drops rapidly (i.e. liquefaction, also called liquefying enzyme). When the storage temperature is no more than 25 ºC, the enzyme activity will be kept no less than 90% of the labeled enzyme activity within half a year; in order to improve the stability of enzyme activity, the concentration of calcium ion should be no less than 50-70ppm; metal ions such as iron, copper, zinc and a certain surfactant have certain influence on enzyme activity. When the liquefying temperature is too low or the material concentration is too high, the enzyme consumption must be increased properly; when the material pH is greater than 8.0 or lower than 5.0, the enzyme activity will be lost
